Cabbage is a leafy green or red plant, grown as an annual vegetable crop for its dense-leaved heads. Closely related to other cole crops, such as broccoli, cauliflower, and brussels sprouts. Cabbage heads generally range from 0.5 to 4 kilograms, and can be green, purple and white. Smooth-leafed firm-headed green cabbages are the most common, with smooth-leafed red and crinkle-leafed savoy cabbages of both colors seen more rarely. It is a multi-layered vegetable. Cabbage is an excellent source of vitamin C and vitamin K, containing more than 20% of the Daily Value for each of these nutrients per serving. Cabbage is also a good source of vitamin B6 and folate, with no other nutrients having significant content per 100 gram serving. Red cabbage contains anthocyanins which are under preliminary research for potential anti-carcinogenic properties.
